Durante il Medioevo fu un importante mercatale sviluppatosi lungo la strada per il Valdarno. I numerosi castelli e pievi nei dintorni sono testimonianza di un’intensa e prospera attività agricola e commerciale. Tra i castelli, tutti di impianto medievale, sono particolarmente interessanti quello di Vertine, quello di Meleto con due imponenti torri angolari rotonde, quello di Barbischio e soprattutto il castello di Brolio. Sulle mura e i bastioni che lo circondano corre un camminamento di ronda da cui si gode un bellissimo panorama del Chianti e della campagna senese. Il castello, completamente distrutto nel 1478, fu ricostruito nel secolo scorso per volere di Bettino Ricasoli.
A meno di 1 Km. da Gaiole è da visitare la bella pieve romanica di Spaltenna mentre, sulla strada per il Valdarno, immersa nel verde di abeti secolari, merita una sosta la Badia a Coltibuono.
