“Maccu” - Acireale in Catania

 

Ingredienti per 4 persone

 

300 gr. di fave secche sgusciate
2 mazzi di finocchi selvatico
1 cipolla
2 carote
2 coste di sedano
1 pomodoro maturo privato della buccia e dei semi
olio d’oliva, sale e pepe

 

Mettere le fave secche a bagno per almeno dodici ore. Nettare, tritare la cipolla, le carote e il sedano e dorarle nell’olio, quindi aggiungere il pomodoro a pezzetti, rigirarle per qualche minuto, unire le fave scolate e le parti più tenere del finocchio selvatico, ben lavate. Coprire d’acqua, salare, pepare e far cuocere, con il coperchio, per circa due ore, a fuoco moderato. Il “maccu” sarà pronto quando si ridurrà in una purea piuttosto solida. Potrà essere servito caldo, da solo o accompagnato con la pasta.
Ciascun commensale irrorerà la minestra nel proprio piatto con un filo di olio crudo. Con i resti del “maccu” cucinato con la pasta si potrà eseguire la ricetta del “maccu frittu”.
